Spicy Cauliflower Bites from Fixate (with a Robin spin)
These Spicy Buffalo Cauliflower Bites are adapted from the Fixate cookbook, are delicious and even got the thumbs up from my hubby!! It’s a fantastic healthy dish that you can bring to a party or potluck. Enjoy!
Nonstick cooking spray
1 medium head (6-7 cups) Cauliflower florests
1/2 tsp Himalayan salt, divided use
1/3 cup Hot pepper sauce
1/3 cup Rice vinegar
1 Tbsp Cornstarch, gluten-free (preferably GMO-free)
2 tsp Ground chili powder
1/4 tsp Ground smoked paprika
1/2 tsp Garlic powder
1/2 tsp Onion powder
1 tsp Honey
1 tsp Worcestershire sauce
2 Tbsp Coconut oil
3 cups Celery sticks
1. Preheat oven to 350 degrees F.
2. Lightly coat large baking sheet with spray.
3. Place cauliflower florets on baking sheet. Coat cauliflower lightly with spray. Season evenly with 1/4 tsp salt.
4. Bake for 20 minutes until tender-crisp.
5. While cauliflower is baking, combine hot sauce, rice vinegar, and cornstarch in medium saucepan; whisk until cornstarch is dissolved.
6. Add chili powder, paprika, garlic powder, onion powder, honey, Worcestershire sauce, coconut oil and remaining 1/4 tsp salt; whisk to blend.
7. Heat hot sauce mixture over medium-high heat; cook, stirring frequently, for 10 minutes, or until thickened. Set aside.
8. Pour hot sauce mixture over baked cauliflower (on baking sheet); mix well.
9. Return cauliflower to oven. Bake for 5 minutes.
10. Serve hot with celery sticks or as a side dish.
I did not use the Lemon Garlic Sauce as the recipe called for an it was delicious just on it’s own!

I even used leftover to make a Buffalo Chicken wrap the following day!
