Quinoa Salad – Labor Day Side Dish
Are you looking for a tasty and healthy Labor Day Side Dish that won’t cause havoc to your healthy eating lifestyle like potato salad or pasta salad will? This Quinoa Salad would make the perfect side dish if you are staying home or going to a barbecue. I first discovered this Quinoa Salad when I did the Ultimate Reset a few years ago. It was one of my favorite meals from the Reset. And, ever since I love offering this salad as a tasty side dish to bring to a pot luck or barbecue!
I have modified it slightly to make it 21 Day Fix approved too. Makes one serving as described below.
Ingredients
- ½ cup cooked quinoa
- 1 Tsp. extra-virgin olive oil
- 1 Tbsp. fresh lemon juice
- Himalayan salt (to taste; optional)
- ½ medium tomato, diced
- ½ medium cucumber, peeled, diced
- 2 Tbsp. finely chopped fresh parsley
- 1 Tbsp. finely chopped fresh mint leaves
Directions
- Combine quinoa, oil, and lemon juice, plus salt (if desired), in a medium bowl; mix well.
- Add tomato, cucumber; toss gently to blend.
- Gently fold in parsley and mint.
- Let salad marinate, covered, in refrigerator for 2 to 3 hours before serving.
