Do you want to make the best of your Summer 2023? I want to take a stand this season that we don’t have to choose between health and happiness… you deserve both! And, honestly? I’ve found that they are amazingly related – when I am most committed to my health, I feel happier, and finding joy in your everyday life 100% supports your health! So, let’s commit to a month of healthier, happier habits with Walking on Sunshine – a 4-week challenge where we will share fitness tips, nutrition tricks, and a burst of sunshine and fit fun to fill this month! This summer is all about shining from the inside, out, and today we’re going to focus on that outside shine with a bonus sweat sesh to fire up your week! Do each move for 30 seconds and repeat 5 rounds for the perfect sweat in less than 10 minutes. Why HIIT? One reason is that you may burn the same amount of calories as another cardio workout at the same time, but HIIT workouts keep you burning calories for up to 2 hours after your workout ends. For me, the only thing sweeter than summertime is summertime + a sweet treat in hand! I pulled a few of my favorite sweet recipes from our recipe library to try this month, and I think I did a pretty fabulous job, if I do say so myself! 🤤
If you want a show-stopping summer dessert, this one will make you melt. Here’s the magic of a semifreddo: It looks like an elegant ice cream cake but it’s soft and airy like a half-frozen mousse. Delish!
Ingredients
FOR STRAWBERRY MIXTURE:
Plastic wrap
1 cup fresh strawberries
1 medium lemon, juiced
2 tsp. Honey
FOR YOGURT MIXTURE:
4 large egg whites (approx. ½ cup / 120 ml)
½ tsp. cream of tartar
2 tsp. honey
2 tsp. pure vanilla extract
2 tsp. finely grated lemon peel (lemon zest)
1 tsp. liquid stevia
2 cups reduced-fat (0 or 2%) plain Greek yogurt
Instructions
1. To make strawberry mixture, line a silicone container (or loaf pan) with plastic wrap. Set aside.
2. Add strawberries, lemon juice, and honey to a blender; cover. Blend until almost smooth. Set aside.
3. To make yogurt mixture, add egg whites and cream of tartar to a medium mixing bowl; beat until soft peaks form. Add honey, extract, lemon zest, and stevia; beat until incorporated. Add yogurt; fold until just mixed.
4. Place ⅓ of yogurt mixture in prepared container; top with ½ of strawberry mixture. Top with another ⅓ of yogurt mixture, remaining ½ of strawberry mixture, and remaining ⅓ of yogurt mixture. Smooth top; fold plastic wrap over top. Freeze for at least 6 hours, or overnight.
5. To serve, flip upside down on a serving plate; let thaw for 30 minutes. Slice into 3 equal pieces. Enjoy with a few strawberry slices as garnish (if desired).
