Busy Moms – Jicama Avocado Salad
I had many requests for this recipe after I posted this picture on my Facebook Page today. This Jicama Avocado Salad is easy to prepare and has just seven ingredients. (It does require a one hour marinate time in fridge.) I love this over spring mix or spinach as pictured for a tasty lunch.

Ingredients
- ½ tsp. Himalayan salt
- 1 Tbsp. pure maple syrup
- 2 Tbsp. fresh lime juice
- 1½ tsp. extra-virgin olive oil
- ½ medium avocado, cut into chunks
- ½ medium jicama, peeled, cut into matchstick-sized pieces
- 2 Tbsp. chopped fresh cilantro (I use freeze dried)
Directions
- Combine salt, maple syrup, lime juice, and oil in a small bowl; mix well.
- Combine avocado, jicama, and cilantro in a medium bowl.
- Drizzle with dressing; toss gently to blend.
- Let salad marinate, covered tightly, in refrigerator for 1 hour or longer before serving.
As mentioned above, I love this over greens. This is two servings over greens.
