Busy Moms – Quick, Healthy Cookie

Busy moms, I know how important feeding our kids healthy food is to us. I also know that kids (and parents) love desserts. The kids will be totally fooled by this yummy cookie. And it’s a nice treat for moms and dads too!

This recipe is from the 21 Day Fix Eating Plan and is considered a treat allowed 3 times per week and replaces one yellow container on that day that you have the treat.

Banana Oatmeal Cookies

2 Tsp Ground cinnamon
1/4 Tsp Sea salt
2 Ripe medium bananas, mashed
1/4 Cup Craisins (actual recipe calls for golden raisins, but I only had Craisins)
1/4 Dry Roasted Sunflower Seeds (actual recipe calls for chopped raw walnuts, but my son is allergic to all nuts so I used seeds)

Preheat oven to 350 degrees. Lightly coat baking sheet with spray. Set aside. Combine oats, cinnamon, and salt in a medium bowl, mix well. Add mashed bananas, Craisins, and sunflower seeds, mix well. Drop by heaping Tbsp. onto prepared baking sheet; flatten cookies with spatula. Bake for 14-15 minutes or until firm. (Makes 8 servings, 2 cookies each)

So for those not doing the 21 Day Fix, but that want to know the calorie info for these, I used caloriecount.com and they have 190 calories per serving. They are high in sugar, mostly from the Craisins (golden raisins have slightly less sugar than the Craisins).
