Busy Moms – My meal prep for next week

I’m a busy mom, as are many of you probably reading this post. Over the past year there have been many days where I just felt like I was one step behind where I needed to be with the order and organization of my life and the family (well they are pretty much my life 😉 ).

IMG_5268I vowed, toward the end of December when I was brainstorming goals for 2014, to be more organized. I hate that chicken with my head cut off feeling. And the first thing I started to do was prepare my kids lunches for the week on Sundays. Takes a huge load off every morning and calms my craziness of trying to get them to school. And I’m sure they appreciate mom not flipping out!

After I had that one down for a few weeks, I started researching prepping meals in advance and finding some new options. We’ve been kinda burned out lately on the meals I’ve been making. We have a little bit of a limitation with Logan’s allergies, but so do moms with kids being picky, right? We don’t use that as an excuse.

So, what did I do last week to prepare for this week? Three things that will save us some sanity during the other busiest time of the day: dinner.

First, I pre-made the ground turkey taco meat for our taco salad on Monday. Monday we have TKD and don’t get home until 5:30 pm so this will save time and stress and I will be able to focus on finishing homework and getting showers!! YAY!

Second, I pre-made and froze a meal from Happy Money Saver. I made the honey lime chicken. Tuesday we have baseball practice and won’t get home until 5:45 pm. I will pull it out of the freezer Monday night so it will be defrosted for Tuesday nights dinner. I will steam some broccoli and use Trader Joe’s pre-made organic brown rice (3 minutes in the microwave) and viola dinner!!

Third, I prepped and froze meat and au jus for the Happy Money Saver French Dip Sandwiches. I will pull this out Tuesday night to pop into the slow cooker Wednesday morning and cook on low most of the day!! Add a side salad or maybe just some carrots and fruit!

I must admit, I’m feeling rather accomplished for this week. Stay tuned for more fun busy mom getting organized ideas and find out if I can keep it up!!! 🙂
